Origin: Clarksville, Tennessee
Source: Martha McCulloch-Williams, 1913
Ingredients
- 4 egg yolks
- 1 cup sugar
- 3/4 cup butter
- 1 glass jelly
- 1 tablespoonful vanilla
- 1 dessert-spoonful cornmeal
- 4 egg whites
- pie crust
Instructions
- Beat the egg yolks very light with the sugar and creamed butter. Add the jelly—the tarter the better. Stir in the vanilla and sifted cornmeal. Fold in the egg whites, beaten very stiff. Pour into pie crusts. This recipe makes two pies. Bake according to your pie crust directions. Meringue is optional and unnecessary.
