Source: Martha McCulloch-Williams, 1913
Ingredients
- 4 egg yolks
- 1 cup sugar
- 3/4 cup butter
- 1 glass jelly
- 1 tablespoonful vanilla
- 1 dessert-spoonful cornmeal
- 4 egg whites
- pie crust
Instructions
- Beat the yolks of four eggs very light, with a cup of sugar, three-quarters cup creamed butter, and a glass of jelly, the tarter the better.
- Add a tablespoonful vanilla and a dessert-spoonful of sifted cornmeal.
- Then add the whites of eggs beaten very stiff.
- Bake in crusts — this makes two fat pies.
- Meringue is optional — and unnecessary.
