Welsh Stew

Ingredients
- beef
- broth or water
- 20 to 30 leeks
- 24 button onions
- 5 to 6 young mild turnips
- 1 small lump white sugar
- 0.5 teaspoonful white pepper
- 1 teaspoonful salt
Instructions
- Combine beef with broth or water in the same proportions as for German Stew and simmer gently for an hour.
- Add the white part of the leeks (or button onions if preferred) along with the turnips cut in slices, a small lump of white sugar, nearly half a teaspoonful of white pepper, and salt (more than twice the amount of pepper).
- Continue to stew the whole softly for a further hour and a quarter to an hour and a half until the vegetables are tender.
