Tartar Sauce

Ingredients
- remoulade or similar sauce
- 1 teaspoonful or more made mustard
- 1 teaspoonful finely-minced shallots
- 1 teaspoonful parsley or tarragon
- 1 teaspoonful capers or pickled gherkins
- cayenne
- salt
- 1 or 2 egg yolks
- tarragon vinegar
- oil
- chopped capers or gherkins
Instructions
- Begin with a remoulade or other sauce of similar nature as your base.
- Stir in a teaspoonful or more of made mustard (French or tartar-mustard preferred).
- Add one teaspoonful each of finely-minced shallots, parsley or tarragon, and capers or pickled gherkins.
- Season highly with cayenne and add salt if needed.
- Adjust the ingredients to taste and to your preferred level of intensity, as the sauce should be very pungent.
