Boiled Apple Sauce

Instructions

  1. Pare the apples quickly and quarter them, taking care to remove the cores entirely.
  2. Dip the prepared apples briefly into fresh water, then lift them out quickly.
  3. Put one tablespoonful of water into a close-shutting saucepan.
  4. Add the apples to the saucepan and place over a gentle fire.
  5. Simmer as softly as possible until the apples are well broken, 30 to 60 minutes, watching and stirring gently and often to ensure even cooking.
  6. Finish the sauce by the receipt which follows.
