Corn Pudding

Ingredients
- 8 large ears corn
- 3 eggs
- 0.5 teaspoon salt
- 1 tablespoon sugar
- black pepper
- paprika
- 0.5 cup butter
- 0.5 cup sweet cream
- milk
Instructions
- Slit the corn grains lengthwise and scrape out the pulp carefully, saving all the milk that runs out. The corn should be full but not hard—if it has reached the dough stage, the grains will keep their shape.
- Beat the eggs very light, then add the salt, sugar, plenty of black pepper, paprika, soft butter, and sweet cream. Mix well.
- Add the corn pulp and milk to the egg mixture and stir well together. If the mixture is too thick, thin it with a little additional milk.
- Pour into a pudding dish, cover, and bake for ten minutes. Then uncover and continue baking until done.
