Sweet-and-Sour Tongue

Instructions

  1. Take a whole milk-veal tongue with its throat, skin it, and boil it to half done.
  2. Finish it in the sweet-and-sour manner of N. 285, using the cooking water to complete the cooking.
  3. To skin, press a red-hot blade against the tongue, repeating as needed.
