To Boil Green Peas

- green peas
- water
- butter
Instructions
- Wash and drain the peas in a colander.
- Put them into plenty of fast-boiling salted water, keeping the pan uncovered.
- If the peas are unequal in size, separate the smaller ones and add them to the saucepan four or five minutes after the larger ones begin to boil.
- Let the peas boil rapidly until they are tender.
- Drain the peas well and dish them quickly.
- Serve them very hot with good melted butter in a tureen, or place a slice of fresh butter in the midst of the peas, heap them well over it in the centre of the dish, and let it dissolve before they are disturbed.
- If mint is to be served, present it in small heaps round the peas, never mixed with them.
