To Boil Green Peas

  1. Wash and drain the peas in a colander.
  2. Put them into plenty of fast-boiling salted water, keeping the pan uncovered.
  3. If the peas are unequal in size, separate the smaller ones and add them to the saucepan four or five minutes after the larger ones begin to boil.
  4. Let the peas boil rapidly until they are tender.
  5. Drain the peas well and dish them quickly.
  6. Serve them very hot with good melted butter in a tureen, or place a slice of fresh butter in the midst of the peas, heap them well over it in the centre of the dish, and let it dissolve before they are disturbed.
  7. If mint is to be served, present it in small heaps round the peas, never mixed with them.
