Boiled Marrow Bones

Instructions

  1. Have the butcher saw the large ends of the marrow bones so they will stand upright when served
  2. Arrange the bones upright in the vessel in which they are to be boiled
  3. Mix flour and water into a paste and cover the ends where the marrow is visible
  4. Tie a cloth tightly over the paste to seal it
  5. Boil large bones for 2 hours; boil moderate-sized bones for 1½ hours
  6. Remove the paste before sending the bones to table
  7. Serve the bones standing upright in a napkin, with slices of dry toasted bread on the side
