Macaroni with Breadcrumbs

Instructions

  1. Half-cook the macaroni, salt, and drain.
  2. Make a balsamella by cooking half the butter with the flour, then adding the milk gradually and boiling about ten minutes.
  3. Add the macaroni and Gruyere and let them absorb the milk gently at the stove's edge.
  4. Stir in the remaining butter and Parmesan, mound in a heatproof dish, cover with breadcrumbs, brown, and serve hot.
