To Boil New Potatoes

Ingredients
- new potatoes
- salt
- small slice fresh butter
- melted butter or white sauce
Instructions
- Choose new potatoes of equal size and freshly dug.
- Rub off the skins with a brush or very coarse cloth.
- Wash the potatoes clean.
- Put them without salt into boiling or at least quite hot water.
- Boil them softly until tender enough to serve.
- Pour off the water entirely.
- Strew fine salt over them and give them a shake.
- Let them stand by the fire in the saucepan for a minute.
- Dish and serve immediately with melted butter, or with white sauce if very young, or toss gently with a small slice of fresh butter if preferred.
