To Boil New Potatoes

Instructions

  1. Choose new potatoes of equal size and freshly dug.
  2. Rub off the skins with a brush or very coarse cloth.
  3. Wash the potatoes clean.
  4. Put them without salt into boiling or at least quite hot water.
  5. Boil them softly until tender enough to serve.
  6. Pour off the water entirely.
  7. Strew fine salt over them and give them a shake.
  8. Let them stand by the fire in the saucepan for a minute.
  9. Dish and serve immediately with melted butter, or with white sauce if very young, or toss gently with a small slice of fresh butter if preferred.
