Fried Corn

Instructions

  1. Fry the bacon until crisp, then remove and set aside. Heat the bacon fat until bubbling hot. Add the corn cut from the cob, seasoned with salt and black pepper, along with the corn-milk. Stir well together for five minutes.
  2. Place an asbestos mat under the skillet and let the corn stand until it forms a thick brown crust over the bottom.
  3. Pour out the contents and loosen the crust with a knife. Lay the crust on top of the remaining corn, then arrange the crisp bacon on top. Serve very hot.
