Italian Pork Cheese

Ingredients
- 1 lb lean pork
- 2 lbs pork inside fat
- 3 teaspoonsful salt
- 1.5 teaspoonful pepper
- 0.5 tablespoonful fresh parsley, thyme, and sage
- 0.5 teaspoonful mace
- 1 small nutmeg
Instructions
- Chop together the lean pork and inside fat, not very fine.
- Strew over the meat three teaspoonsful of salt and nearly half as much pepper.
- Add half a tablespoonful of minced parsley, thyme, and sage (with sweet-basil if available).
- Mix all the seasonings thoroughly throughout the meat.
- Press the meat closely and evenly into a shallow tin, such as those used for Yorkshire puddings.
- Bake in a very gentle oven for one to one and a half hours.
- Cool completely and serve cold in slices.
