Domestic Duck With Rice Garnish

Ingredients
- domestic duck
- large onion
- parsley, carrot, celery
- g fat-and-lean prosciutto
- tbsp olive oil
- tomato sauce or paste
- pinch dried mushrooms
- g rice
- g butter
- Parmesan cheese
- salt and pepper
Instructions
- Make a chopped base of onion, parsley, carrot, celery and 50 g prosciutto; brown the duck on it in two spoonfuls of oil, seasoned with salt and pepper.
- Moisten with tomato sauce or paste and water, adding a pinch of dried mushrooms; cook, then sieve and degrease the juices, reserving the mushrooms.
- Start 200 g raw rice in 40 g butter, then cook with hot water added gradually, flavoring with the duck's juices and Parmesan at the end.
