To Boil a Brill

Ingredients
- 1 fresh brill
- water
- lobster, anchovy, crab, or shrimp sauce
- lobster coral
- curled parsley
Instructions
- Clean the brill and cut off the fins.
- Bring water to nearly boiling.
- Place the brill in the water and simmer gently.
- Cook for about 20 minutes if moderate-sized, or 30 minutes if large, watching carefully and removing the fish as soon as it begins to crack.
- Drain well on a fish-plate when lifted out.
- Dish on a napkin.
- Serve with lobster, anchovy, crab, or shrimp sauce.
- If desired for a formal dinner, sprinkle lobster coral (rubbed through a sieve) over the fish.
- Garnish with curled parsley placed in light tufts around it.
