To Boil a Brill

Instructions

  1. Clean the brill and cut off the fins.
  2. Bring water to nearly boiling.
  3. Place the brill in the water and simmer gently.
  4. Cook for about 20 minutes if moderate-sized, or 30 minutes if large, watching carefully and removing the fish as soon as it begins to crack.
  5. Drain well on a fish-plate when lifted out.
  6. Dish on a napkin.
  7. Serve with lobster, anchovy, crab, or shrimp sauce.
  8. If desired for a formal dinner, sprinkle lobster coral (rubbed through a sieve) over the fish.
  9. Garnish with curled parsley placed in light tufts around it.
