Black Cabbage as a Side Dish

Instructions

  1. Remove ribs, boil the black cabbage, and chop it finely.
  2. Use meat gravy, or make a strained prosciutto-onion gravy in butter.
  3. Simmer the cabbage in the gravy with pepper, little salt, and more butter/broth as needed; serve as a garnish.
  4. Soup variant: garlic-rubbed toast dipped in the cooking water, topped with the cabbage and dressed with oil, salt, and pepper.
