TO STEW SHIN OF BEEF

Ingredients
- 1 shin of beef beef shin
- sufficient cold water
- 1.25 ounce salt
- a few cloves
- some black pepper
- 2 or more onions
- 1 celery root
- 1 bunch savoury herbs
- 4 to 5 carrots
- 4 to 5 turnips
Instructions
- Wash the beef shin and place it in a pot with sufficient cold water to keep it just covered.
- Bring to a boil, then remove the scum that rises to the surface.
- Add one ounce and a quarter of salt per gallon of water.
- Tie the cloves and black pepper loosely in a fold of muslin to make a sachet.
- Add the sachet, onions, celery root, bunch of savoury herbs, carrots, and turnips to the pot.
- Let the beef stew gently for four to five hours, until very tender, adding carrots and turnips partway through if they are to be served with the meat.
- Lift the meat into a dish and arrange the vegetables around it.
- Strain the cooking liquid and skim away the fat.
- Pour the broth over the meat, either thickened and flavoured or quite plain.
