Dressed Cucumbers

Instructions

  1. Pare and slice the cucumbers very thin.
  2. Strew a little fine salt over them and let them stand a few minutes.
  3. Drain off the water by raising one side of the dish and letting it flow to the other; pour it away.
  4. Strew more salt and a moderate seasoning of pepper over the cucumbers.
  5. Add two or three tablespoonsful of the purest salad-oil and turn the cucumbers well so the whole receives a portion of it.
  6. Pour over them from one to three dessertspoonsful of chili vinegar, and a little common vinegar should it be needed.
  7. Turn them into a clean dish and serve.
