Beefsteak in the Pan

Ingredients
- beefsteak (large)
- small piece butter
- olive oil
- garlic and rosemary
- broth or water
- potatoes
- tomato paste
Instructions
- For a steak of doubtful tenderness, pan-cook it with a small piece of butter and a drop of oil, scented with garlic and rosemary (as in recipe 527).
- Add a splash of broth, water or tomato sauce if needed.
- Serve with potato chunks cooked in the juices; if the juices run short, add more broth, butter and tomato paste.
