Beefsteak in the Pan

Instructions

  1. For a steak of doubtful tenderness, pan-cook it with a small piece of butter and a drop of oil, scented with garlic and rosemary (as in recipe 527).
  2. Add a splash of broth, water or tomato sauce if needed.
  3. Serve with potato chunks cooked in the juices; if the juices run short, add more broth, butter and tomato paste.
