Spleen Crostini

Ingredients

Instructions

  1. Skin the spleen and cook it in butter with meat gravy (or a battutino of onion, oil, butter, salt, pepper and spices).
  2. Chop it very fine with the anchovies, return to the juices, and bind with a teaspoon of breadcrumb.
  3. Without boiling again, spread on bread slices dried (not toasted) and brushed with butter.
