Snow Eggs (Floating Islands)

Ingredients

Instructions

  1. Heat the milk in a wide pan. Whip the egg whites stiff with a pinch of salt.
  2. Beat in 20-30g confectioners' sugar to lightly sweeten the whites.
  3. Shape egg-sized spoonfuls of meringue and poach in the boiling milk, turning to firm all over; drain in a sieve.
  4. Strain the milk and, cold, make a vanilla custard with it, the yolks and sugar (as No. 685).
  5. Pile the snow eggs on a platter, pour the custard over and serve cold. Serves eight to ten.
