Celery as a Side Dish

Ingredients
- g celery
- g butter
- meat gravy (sugo di carne)
- Parmesan
- g prosciutto (fat and lean)
- onion
- cloves
- broth
- batter
- egg and breadcrumbs
- lard or oil
Instructions
- Use white ribs and stalk; cut to length, boil in lightly salted water about 5 minutes, and dry.
- Method 1: sizzle in butter, cook through with meat gravy, finish with Parmesan.
- Method 2: make a base of butter, minced prosciutto, quarter onion, and cloves; add broth, strain, and braise the celery in the gravy with pepper.
- Method 3: flour and batter-fry, or flour, egg, bread, and fry; good with meat stews.
