Sorrel Salad

Instructions

  1. Take very young tender sorrel leaves from the stems.
  2. Wash them delicately clean and drain them well.
  3. Shake them dry in a salad-basket or in a soft cloth held by the four corners.
  4. Arrange the sorrel lightly in the serving bowl.
  5. At the instant of serving, sauce it simply with French dressing of oil with a small portion of vinegar, or with Mayonnaise mixed with chili instead of a milder vinegar.
  6. If desired, divide the sorrel with your fingers and mingle it with an equal proportion of very tender lettuces.
  7. When not objected to, strew mixed tarragon thickly upon them, or add a small quantity of green onions or eschalots if preferred.
