Sorrel Salad

Ingredients
- very young tender sorrel
- French dressing of oil with vinegar
- Mayonnaise mixed with chili
- equal proportion very tender lettuces
- thickly mixed tarragon
- small quantity green onions or eschalots
Instructions
- Take very young tender sorrel leaves from the stems.
- Wash them delicately clean and drain them well.
- Shake them dry in a salad-basket or in a soft cloth held by the four corners.
- Arrange the sorrel lightly in the serving bowl.
- At the instant of serving, sauce it simply with French dressing of oil with a small portion of vinegar, or with Mayonnaise mixed with chili instead of a milder vinegar.
- If desired, divide the sorrel with your fingers and mingle it with an equal proportion of very tender lettuces.
- When not objected to, strew mixed tarragon thickly upon them, or add a small quantity of green onions or eschalots if preferred.
