Blackberry Wine

Instructions

  1. Pick, wash, and mash thoroughly the sound ripe berries. Pour upon each gallon a gallon of freshly-boiling water, and let stand twenty-four hours.
  2. Strain and measure the juice. Allow three and one-half pounds sugar to each gallon of juice. Put into clean cask or jugs, but do not fill—leave room for fermentation.
  3. Cover the mouth or bung-hole with thin cloth and let stand in clean warm air for two months.
  4. Rack off into clean vessels, throwing away the lees, and cork or cover close.
  5. Let stand another month before using. The wine improves with age up to a year.
