Chicken Breasts, Scarlet Style

Ingredients
- 1 chicken breast
- 20 g butter (for the balsamella)
- 40 g flour (for the balsamella)
- 2 dl milk (for the balsamella)
- 50 g salted tongue
- 1 egg
- breadcrumbs
- butter or lard
- salt, pepper, lemon
Instructions
- Cut six thin fillets from the breast and cook in butter with salt and pepper.
- Make a balsamella (bechamel) from 20 g butter, 40 g flour, 2 dl milk; stir in 50 g finely chopped salted tongue.
- Once cold, coat both sides of the fillets with the mixture, dip in beaten egg, and bread.
- Brown in butter or lard and serve with lemon wedges.
