Chicken Breasts, Scarlet Style

Instructions

  1. Cut six thin fillets from the breast and cook in butter with salt and pepper.
  2. Make a balsamella (bechamel) from 20 g butter, 40 g flour, 2 dl milk; stir in 50 g finely chopped salted tongue.
  3. Once cold, coat both sides of the fillets with the mixture, dip in beaten egg, and bread.
  4. Brown in butter or lard and serve with lemon wedges.
