Boiled Breast of Veal

Ingredients

Instructions

  1. Wash both the veal and sweetbread with exceeding nicety.
  2. Cover them with cold water and bring to a simmer.
  3. Clear off the scum as it rises.
  4. Add a little salt, a bunch of parsley, a large blade of mace, and twenty white peppercorns.
  5. Simmer the meat from an hour to an hour and a quarter.
  6. If desired, remove the sweetbread when half done and curry it, make it into cutlets, or stew it in brown gravy.
  7. Serve the veal very hot, covered with rich onion sauce.
  8. If onions are objected to, substitute white sauce and a cheek of bacon, or parsley and butter instead.
