Mayonnaise Salad

Ingredients
- romaine or head lettuce
- beets, boiled
- potatoes, boiled
- anchovies
- boiled fish, in pieces
- capers
- sweetened olives
- salt, olive oil, a little vinegar
- mayonnaise sauce (as in No. 126)
- tsp mustard
- lemon and a drop of vinegar
Instructions
- Cut lettuce into finger-wide strips and mix with thinly sliced boiled beets and potatoes, boned anchovy pieces, and small pieces of boiled fish; optionally add capers and sweetened olive flesh.
- Dress with salt, oil and a little vinegar, turn to coat, and heap into a mound.
- Make mayonnaise as in No. 126, but give piquancy with a teaspoon of mustard (in place of pepper) and a drop of vinegar with the lemon.
- Coat the salad with the sauce and decorate with reserved beet and potato slices, and a butter flower on top for show.
