French Batter

Instructions

  1. Cut the butter into small bits and pour boiling water over it.
  2. When the butter is dissolved, add the cold water so that the whole mixture is approximately milk warm.
  3. Gradually and very smoothly mix in the flour and salt, adjusting the salt quantity according to whether the batter is for fruit fritters or for meat and vegetables.
  4. Add a little additional water if the batter appears too thick, as different flours absorb liquid at different rates.
  5. Just before using the batter, stir in the egg whites that have been beaten to a solid froth.
