French Batter

Ingredients
- 2 oz butter
- boiling water
- 3/4 pint cold water
- 12 oz flour
- pinch salt
- 2 egg whites
Instructions
- Cut the butter into small bits and pour boiling water over it.
- When the butter is dissolved, add the cold water so that the whole mixture is approximately milk warm.
- Gradually and very smoothly mix in the flour and salt, adjusting the salt quantity according to whether the batter is for fruit fritters or for meat and vegetables.
- Add a little additional water if the batter appears too thick, as different flours absorb liquid at different rates.
- Just before using the batter, stir in the egg whites that have been beaten to a solid froth.
