Bread Sauce with Onion

Ingredients
- 1/2 pint fine bread-crumbs
- 1 large mild onion, white part only
- 3/4 pint new milk
- 1 oz. butter
- 4 tablespoonsful cream
- salt
- grated nutmeg
Instructions
- Put the bread-crumbs and onion quarters into a very clean saucepan.
- Pour in the new milk and boil very gently, stirring often, until the onion is perfectly tender—this will take from forty minutes to an hour.
- Press the entire mixture through a clean hair-sieve.
- If the sauce is too thin, reduce it by quick boiling.
- Add seasoning of salt and grated nutmeg, then stir in the butter and cream.
- Continue cooking until the sauce reaches a proper thickness.
- Dish and send quickly to table.
