Bread Sauce with Onion

Instructions

  1. Put the bread-crumbs and onion quarters into a very clean saucepan.
  2. Pour in the new milk and boil very gently, stirring often, until the onion is perfectly tender—this will take from forty minutes to an hour.
  3. Press the entire mixture through a clean hair-sieve.
  4. If the sauce is too thin, reduce it by quick boiling.
  5. Add seasoning of salt and grated nutmeg, then stir in the butter and cream.
  6. Continue cooking until the sauce reaches a proper thickness.
  7. Dish and send quickly to table.
