Common Cucumber Sauce

Ingredients

Instructions

  1. Pare and slice two or three young cucumbers.
  2. Dust them lightly with pepper and flour.
  3. Dissolve an ounce and a half of butter in a small stewpan or iron saucepan over a brisk fire.
  4. Shake the cucumbers in the hot butter for twelve to fifteen minutes until they are a fine brown.
  5. Pour the beef broth or brown gravy to them by degrees.
  6. Add salt and more pepper if required.
  7. Stew the whole for five minutes.
  8. Send the sauce very hot to table.
