Common Cucumber Sauce

Ingredients
- 2 medium cucumbers
- 1.5 ounce butter
- 0.5 pint beef broth or brown gravy
- to taste salt
- to taste pepper
- 1 minced onion
- 1 spoonful vinegar
Instructions
- Pare and slice two or three young cucumbers.
- Dust them lightly with pepper and flour.
- Dissolve an ounce and a half of butter in a small stewpan or iron saucepan over a brisk fire.
- Shake the cucumbers in the hot butter for twelve to fifteen minutes until they are a fine brown.
- Pour the beef broth or brown gravy to them by degrees.
- Add salt and more pepper if required.
- Stew the whole for five minutes.
- Send the sauce very hot to table.
