White Onion Sauce

Ingredients
- some large white onions
- cold water
- little rich melted butter
- 1 to 2 spoonfuls cream or milk
- to taste salt
Instructions
- Strip the skin from large white onions.
- Remove the tops and roots, then cut them in two.
- Throw them into cold water as you finish each one.
- Cover them plentifully with more water and boil until very tender.
- Lift them out and drain well.
- Press the water thoroughly from them.
- Chop them small and rub them through a sieve or strainer.
- Put the sieved onions into a little rich melted butter mixed with a spoonful or two of cream or milk and a seasoning of salt.
- Give the sauce a boil and serve it very hot.
