Roast Beef Steak

Ingredients
- 1 slice beef from the middle of the rump
- fine salt
- cayenne or common pepper
- forcemeat
- butter
- brown gravy
Instructions
- Flatten the beef slice on a table and sprinkle the inside lightly with fine salt and cayenne or common pepper.
- Prepare a roll of forcemeat as directed in No. 1, Chapter VIII, adding minced onion or eschalot and extra spices if desired.
- Place the forcemeat on one end of the steak and roll it up tightly around it.
- Secure the meat with skewers and ties to prevent the forcemeat from escaping.
- Fasten a buttered paper over the rolled meat.
- Roast for 1½ hours or longer according to its size, keeping it well basted with butter throughout.
- Twenty minutes before serving, remove the paper and flour the meat.
- Continue basting until ready to serve.
- Serve with brown gravy poured over the beef.
