Roast Beef Steak

Instructions

  1. Flatten the beef slice on a table and sprinkle the inside lightly with fine salt and cayenne or common pepper.
  2. Prepare a roll of forcemeat as directed in No. 1, Chapter VIII, adding minced onion or eschalot and extra spices if desired.
  3. Place the forcemeat on one end of the steak and roll it up tightly around it.
  4. Secure the meat with skewers and ties to prevent the forcemeat from escaping.
  5. Fasten a buttered paper over the rolled meat.
  6. Roast for 1½ hours or longer according to its size, keeping it well basted with butter throughout.
  7. Twenty minutes before serving, remove the paper and flour the meat.
  8. Continue basting until ready to serve.
  9. Serve with brown gravy poured over the beef.
