Ingredients
- 4 oz bread crumbs
- 1/4 oz lemon rind
- 1/4 oz mixed savoury herbs, minced
- nutmeg
- 1/2 teaspoonful salt
- 1/4 to 1/3 teaspoonful pepper or cayenne
- 2 oz butter
- 1 egg yolk
Instructions
- Grate the bread crumbs very lightly and finely from the inside of a stale loaf.
- Mix thoroughly with the bread crumbs the lemon rind pared thin and minced extremely small.
- Add the minced savoury herbs (two-thirds parsley and one-third thyme), a little grated nutmeg, salt, and pepper or cayenne to season sufficiently.
- Break the butter into very small bits and add to the mixture along with the unbeaten egg yolk.
- Work the whole together well with your fingers until it is smoothly mixed.
