  1. Grate the bread crumbs very lightly and finely from the inside of a stale loaf.
  2. Mix thoroughly with the bread crumbs the lemon rind pared thin and minced extremely small.
  3. Add the minced savoury herbs (two-thirds parsley and one-third thyme), a little grated nutmeg, salt, and pepper or cayenne to season sufficiently.
  4. Break the butter into very small bits and add to the mixture along with the unbeaten egg yolk.
  5. Work the whole together well with your fingers until it is smoothly mixed.
