Small John Dories Baked

Instructions

  1. Clean the fish and dry them in a cloth.
  2. Season the insides slightly with fine salt.
  3. Dredge a little flour on the fish.
  4. Stick a few very small bits of butter on them, using only just sufficient to prevent their becoming dry in the oven.
  5. Lay them singly on a flat dish.
  6. Bake them very gently for fourteen to sixteen minutes.
  7. Remove the heads and cut away the fins and filaments of the back for improved appearance.
  8. Serve with the same sauce as baked soles.
