Braised Sturgeon (Fricandeau)

Instructions

  1. Skin a thick piece of sturgeon (at least 500 g) and lard it with seasoned lardons.
  2. Tie crosswise, flour, and brown on all sides in oil and butter with salt and pepper.
  3. Moisten with broth to finish cooking, squeeze a lemon over, and serve with its sauce.
