Instructions

  1. Peel the button onions.
  2. Fry the onions in butter until lightly browned.
  3. Stir in the flour and cook until the whole mixture reaches a deep amber shade.
  4. Pour in the red wine and the boiling broth or water.
  5. Season with salt, pepper or cayenne, and lemon-pickle catsup or lemon-juice.
  6. Boil until the onions are quite tender.
  7. Cut and trim the cooked beef into small handsome slices and arrange them in a clean saucepan.
  8. Pour the gravy and onions over the beef and let it stand awhile to absorb the flavor.
  9. Place the hash near the fire and heat it thoroughly.
  10. Serve immediately without allowing it to boil.
