  1. Peel, sliver and toast the almonds and pistachios; dice the candied citron.
  2. Melt chocolate in some milk with sugar and butter; separately blend the chestnut flour with the rest of the milk, combine, and cook.
  3. Cool, then add yolks, whipped whites, and the nuts and citron.
  4. Set in a greased ring mould in a bain-marie, chill with iced salt, turn out, and fill the centre with whipped cream. Serves 7-8.
