Crayfish Soup with Meat Sauce

Ingredients
- g crayfish (gamberi)
- ladlefuls broth
- g bread crumb
- butter
- meat sauce (No. 4)
- bread
- parmesan
Instructions
- Cook 150 g crayfish in two ladlefuls of broth; lift them out and dissolve 30 g butter-fried bread crumb in the liquid.
- Pound the crayfish in a mortar and pass them through a sieve, moistening with that liquid to extract all the flesh.
- Combine the flesh with meat sauce (No. 4), then stir into the rest of the broth.
- Moisten toasted or fried diced bread with it and serve with grated parmesan. Serves four.
