Crayfish Soup with Meat Sauce

Ingredients

Instructions

  1. Cook 150 g crayfish in two ladlefuls of broth; lift them out and dissolve 30 g butter-fried bread crumb in the liquid.
  2. Pound the crayfish in a mortar and pass them through a sieve, moistening with that liquid to extract all the flesh.
  3. Combine the flesh with meat sauce (No. 4), then stir into the rest of the broth.
  4. Moisten toasted or fried diced bread with it and serve with grated parmesan. Serves four.
