Cucumber Vinegar

Ingredients

Instructions

  1. Wipe the cucumbers and slice them into a stone jar without paring.
  2. Pour boiling vinegar over the cucumbers, adding a teaspoonful of salt and two-thirds as much peppercorns per pint and a half of vinegar.
  3. Keep the jar well defended from the air and allow the mixture to remain for one to two months.
  4. Strain the vinegar and allow it to settle.
  5. Pour the clear vinegar into small dry bottles and cork them well.
