Cucumber Vinegar

Ingredients
- young cucumbers, quickly-grown
- 1.5 pint vinegar
- 1 teaspoon salt
- 1 teaspoon peppercorns
- mild onion
Instructions
- Wipe the cucumbers and slice them into a stone jar without paring.
- Pour boiling vinegar over the cucumbers, adding a teaspoonful of salt and two-thirds as much peppercorns per pint and a half of vinegar.
- Keep the jar well defended from the air and allow the mixture to remain for one to two months.
- Strain the vinegar and allow it to settle.
- Pour the clear vinegar into small dry bottles and cork them well.
