To Roast a Rabbit

Ingredients
- 1 rabbit
- thin slices of bacon
- forcemeat (No. 1, Chapter VIII)
- butter
- flour
- good brown gravy
- currant jelly
Instructions
- Remove the back-bone from the rabbit, following the directions given elsewhere in the text.
- Line the inside with thin slices of bacon.
- Fill it with forcemeat (No. 1, Chapter VIII).
- Sew the rabbit up and truss it.
- Roast it at a clear, brisk fire.
- Flour it well soon after it is laid down.
- Baste it constantly with butter throughout cooking.
- Serve it with good brown gravy and currant jelly, if desired.
