Wild Duck

Ingredients
- 1 wild duck
- vinegar and water
- 1 onion
- fat or butter
- salt and pepper
- 1 tart apple
- 1 mild onion
- 1 small pinch powdered sage
- 0.5 cup bread crumbs, grated
- 1 tablespoonful butter
- 1 spoonful tart jelly
- 1 wineglass claret
- 1 tablespoonful tomato catsup
Instructions
- If the duck is likely to be fishy, soak it for an hour in vinegar and water made very salt.
- For a fishy duck: Stuff the cavity with an onion stuck very full of cloves. For a milder duck: Stuff with a tart apple stuck with cloves and a mild onion, and strew lightly inside a small pinch of powdered sage.
- Season the duck inside and out with salt and pepper. Rub it over generously with fat or butter.
- Roast in quick heat to the degree required.
- For the sauce: Brown half a cup of grated bread crumbs in a tablespoonful of butter. Add a spoonful of tart jelly, a wineglass of claret, and a tablespoonful of tomato catsup. Season to taste with salt and pepper.
