Fried Eggs

  1. Cover the frying pan with grease and heat until hot but not scorching. Break eggs separately into the pan, taking care not to break the yolks. Sprinkle lightly with salt and pepper, and keep the edges from running together.
  2. Once the eggs have hardened underneath, dip hot grease over the tops repeatedly, keeping on until the white sets. If the heat is right, the eggs will not stick to the pan.
  3. Cook to desired firmness, then take up with a cake-turner and lay in a shallow pan lined with soft clean paper. Keep hot while they drain for about a minute, then transfer to a blazing hot dish and serve.
  4. If serving with ham, lay it in the middle with eggs arranged all around it. Triangles of fried toast can be placed between the eggs for both appearance and flavor.
