Instructions

  1. Mince the mutton with or without a portion of its fat.
  2. Mix the minced mutton with the shred lettuces, young peas, salt, pepper, water, and butter.
  3. If desired, add a few minced green onions to the mixture.
  4. Keep the whole well stirred with a fork over a clear and gentle fire until it is quite hot.
  5. Place the mixture closely covered by the side of the stove, or on a high trivet.
  6. Allow it to stew as softly as possible for a couple of hours.
  7. If using the cucumber variety, cut one or two half-grown cucumbers small by scoring the ends deeply as they are sliced, and add to the stew.
  8. If using the mushroom variety, add a quarter pint of minced mushrooms instead.
  9. If using the currie variant, add a dessertspoonful of currie-powder and a large chopped onion to the mixture.
  10. Send to table with a dish of boiled rice.
