Brown Onion Sauce

Instructions

  1. Cut off both ends of the onions and slice them into a saucepan in which two ounces of butter have been dissolved.
  2. Keep them stewing gently over a clear fire until they are lightly coloured.
  3. Pour half a pint of brown gravy to them and boil until the onions are perfectly tender.
  4. Work the sauce altogether through a strainer.
  5. Season it with a little cayenne and serve it very hot.
