Chickens in Blankets

  1. Dress young fat chickens (about three pounds each) as for roasting. Grease and season inside and out. Insert one peeled sweet potato and a small lump of butter into each chicken.
  2. Lay the chickens on a low rack in a deep pan and brown them lightly in the oven. Once browned, fit a round of good short crust (rolled a quarter-inch thick) closely over each chicken.
  3. Return to the oven. When the crust is a rich brown, the chickens will be done. Serve the crust with each portion—thereby recalling a glorified chicken pie.
