Beef Kidney

Instructions

  1. Strip the skin and fat from the kidney, then slice it rather thin.
  2. Season the slices with pepper, salt, and grated nutmeg.
  3. Sprinkle over the kidney plenty of minced parsley, or equal parts of parsley and eschalots chopped very small.
  4. Fry the slices over a brisk fire until nicely browned on both sides.
  5. Stir amongst the kidney slices a teaspoonful of flour.
  6. Pour in by degrees a cup of gravy and a glass of white wine.
  7. Bring the sauce to the point of boiling.
  8. Add a morsel of fresh butter and a tablespoonful of lemon juice.
  9. Pour the whole into a hot dish garnished with fried bread.
