To Roast Wild Ducks

Ingredients
- 1 bird wild duck
- soft bread
- flour
- butter
Instructions
- If desired, soak a bit of soft bread in port wine or claret and place inside the duck.
- Flour the bird well.
- Lay it near a very clear and brisk fire so that it browns quickly while retaining its juices.
- Baste it plentifully and constantly with butter, turning the spit rapidly if possible.
- Roast for fifteen to twenty minutes for medium doneness.
- Allow a few additional minutes if a less rare bird is preferred, or somewhat less time if the duck is to be scarcely more than heated through.
