Brown Apple Sauce

Ingredients
- 1 lb pearmains or other well-flavoured boiling apples
- 1/3 pint rich brown gravy
- black pepper or cayenne
Instructions
- Pare and core 1 pound of pearmains or other well-flavoured boiling apples.
- Place the apples in a pot with one-third pint of rich brown gravy.
- Stew gently over moderate heat for 45 minutes to 1¼ hours, until the apples break down into a thick and perfectly smooth marmalade.
- Season the sauce rather highly with black pepper or cayenne to taste.
- Serve very hot.
