Brown Apple Sauce

Instructions

  1. Pare and core 1 pound of pearmains or other well-flavoured boiling apples.
  2. Place the apples in a pot with one-third pint of rich brown gravy.
  3. Stew gently over moderate heat for 45 minutes to 1¼ hours, until the apples break down into a thick and perfectly smooth marmalade.
  4. Season the sauce rather highly with black pepper or cayenne to taste.
  5. Serve very hot.
