Suffolk Salad

Ingredients
- tender lettuces
- lean ham
- hard-boiled eggs
- English salad sauce
- cold chicken or veal
Instructions
- Fill a salad-bowl from half to three parts full with very tender lettuces shred small.
- Add minced lean ham and hard-boiled eggs (or their yolks only, also minced), placing them in alternate layers.
- If using cold chicken or veal, cut it in thin slices about the size of a shilling and add to the bowl.
- Optionally, slice the ham and eggs instead of mincing them, and neatly arrange the whole in a chain or otherwise round the inside of the bowl.
- Dress the mixture with English salad sauce, but do not pour it into the bowl until the instant of serving.
