Sauce Piquante

Ingredients
- 1.5 oz butter
- 1 tablespoon eschalots, minced
- 1 teaspoon flour
- 0.5 pint gravy or good broth
- 3 chilies
- 1 bay-leaf
- 1 small bunch thyme
- black pepper
- 0.5 wineglassful best vinegar
Instructions
- Heat the butter in a saucepan and brown the minced eschalots (or onions) lightly.
- When they are partially done, stir in the flour.
- Pour in the gravy or good broth, and bring to a boil.
- Add the chilies, bay-leaf, and small bunch of thyme.
- Simmer gently for twenty minutes.
- Remove the thyme and bay-leaf.
- Season generously with black pepper.
- Stir in the vinegar and serve.
