Double Mushroom Catsup

Ingredients
- 1 gallon fresh mushrooms
- 3 oz salt
- 1 quart ready-made mushroom catsup
- 1 oz whole black peppercorns
- 1 drachm mace
- 1 oz ginger
- 3–4 grains cayenne
Instructions
- Spread the fresh mushrooms in a large vessel and strew 3 ounces of salt over them.
- Pour the quart of ready-made catsup over the mushrooms.
- Stir the mixture occasionally for four days.
- After four days, drain the liquor very dry from the mushrooms, discarding the solids.
- Transfer the drained liquor to a saucepan and add the whole black peppercorns, mace, ginger, and cayenne.
- Bring to a boil and boil for fifteen minutes.
- Pour into clean bottles and seal when completely cool.
