Double Mushroom Catsup

Instructions

  1. Spread the fresh mushrooms in a large vessel and strew 3 ounces of salt over them.
  2. Pour the quart of ready-made catsup over the mushrooms.
  3. Stir the mixture occasionally for four days.
  4. After four days, drain the liquor very dry from the mushrooms, discarding the solids.
  5. Transfer the drained liquor to a saucepan and add the whole black peppercorns, mace, ginger, and cayenne.
  6. Bring to a boil and boil for fifteen minutes.
  7. Pour into clean bottles and seal when completely cool.
